Coffeepreneur San Wallman brings his years of coffee experience to the table with Brain Helmet Coffee. Drummer, guitarist, barista, coffee enthusiast and now founder and roaster of Brain Helmet, Sam isn’t afraid of a challenge. Luckily for us, we got the opportunity to see if Sam’s latest venture stacks up with the rest of Milwaukee’s coffee offerings.

This coffee was sourced from Royal Coffee NY
COOPAFSI (Cooperative Agraria “Frontera San Ignacio” Ltda) was officially established in June 1969. Gender equality was an important factor when the land was purchased and divided among producers. This particular cooperative is unique because they empower and promote “women grown” coffee. These women contribute to the physical and sensory quality of the coffee. They are always managing new projects and developing new ways to improve the lives of their families. They focus their efforts on improving quality and delivering consistent coffee to different markets. In 2016, a committee of women was created by the cooperative and they are responsible for distributing loans which will enable producers to improve their own land while also taking part in new developments for their kitchens, crafts and livestock. They also created a computer lab which allows all members to stay up to date with modern technology.

This medium roast smells pleasant and fresh.
Pour Over – Shining through this pour over was the punch of tangerine! This was definitely a clean and fruity pour over. Once this cooled down a little we could detect a little more nuttiness in this medium roast.
Handmade Costa Rican V60 – Yes, this contraption was purchased directly from a little old man on the street in Costa Rica. Kind of super cool! Does it do Brain Helmet’s Peru Coopafsi justice though? Welp, it ended up giving the coffee a bonus tasting note of burlap, but not enough to discard this little discovery. It kind of made us feel like hippies in need of some reggae music (or Shogun?) and a beach chair.
Espresso Shot – This may have been the best shot of espresso we’ve ever tasted. Fruity! Punchy! No bitterness! Just to make sure our taste buds weren’t fooling us, we tried this a second time. And a third.
Iced Maple Latte – Does this espresso hold its own when sweetened and put on ice? It makes for a very non-offensive, smooth drink. The tasting notes of the espresso didn’t knock us out, but the profile blended nicely with the Roth’s maple syrup (shoutout to Cumberland, WI!).
Latte – This really highlighted the sweetness of the Peru Coopfasi’s caramel tasting notes. Mild and smooth, there was zero bitterness. Even though the acidity of this coffee is moderate, there’s no sour aftertaste or pungency whatsoever.
Our final verdict: This coffee is a real crowd-pleaser; a well-rounded single origin that would be approved by most coffee lovers. If you’re wondering what Brain Helmet coffee to try, start here.
